Broccoli tabbouleh

Broccoli Super Tabbouleh

This is legendary in my house, it’s fresh, delicious, goes with everything, is packed with nutrition and is beyond simple to knock up.  Trust when I say make loads, stick it in the fridge and it will get though a good couple of days of lunches and dinners.  it’s the perfect side to a simple steak or some grilled chicken, Hallumi or Tofu.  I also don’t see why you couldn’t add in some chick peas or some quinoa to add in extra protein.

 

Ingredients

200g Broccoli Florets (about 1 whole head)

3 Spring Onions

100g Cherry Tomatoes

1/3 Cucumber, diced

Large handful of Parsley, leaves stripped and chopped

Large Handul of fresh Mint leaves

2-2.5 tbsp Lemon Juice

60ml Olive Oil

Salt 100g feta

 

Method

1. place the Broccoli in a food processor and whizz until reduced to a crumb the size of cous cous. Scoop these out into a mixing bowl.

2. Stir in the remaining ingredients except for the Feta & Mint. Taste for seasoning.

3. Crumcble to Feta over the top and then tear the Mint leaves over to finish it off.  Add an extra drizzle of Olive Oil if desired. Serve straight away.
